Cashew sour cream

So, let’s talk about dairy substitutes. There are so many to choose from, from all kinds of plant based milk  to coffee creamer, egg replacers, plant based cheese. But let’s talk about sour cream today.

This sour cream is made from cashew nuts, filled with healthy fats, super rich and creamy. There are no hormones it does not produce acid in your body or makes you feel bloated.

So let’s start and create homemade sour cream!

You will need:

100 grams of cashew nuts

2 table spoons of lemon juice

0,5 cup of water

0,5 tea spoon of apple cider vinegar

0,5 tea spoon of garlic powder

0,5 tea spoon of salt

Ground pepper to taste

  1. Soak cashews overnight.
  2. Add all ingredients to the blender and blend everything for few minutes. Make sure your sour cream is smooth and there are no nut pumps.
  3. I like to refrigerate my cashew sour cream for few hours so it is nice and cold.

You can easily refrigerate this sour cream for 3-4 days. It is great with non-sweet pancakes, potatoes or as a veggie dip.
